This work was focused on the evaluation of the thermal characteristics of pollen in connection with its hydration in sixteen samples of hops and potatoes. The water content and the following characteristics related to the behavior of water in the biological material under ultra-low temperatures were determined: the proportion of frozen water content, melting point and glass transition temperature. It was found that the resulting thermal properties have a major effect on water content, and conversely the effect of variety and species of the plant was not significant; the dependence of the monitored parameters was a function of the water content regardless of the tested genotype. It was found that when the water content fell below 0.27 g of water per g of dry matter, no water crystallization occurred and at the same time the presence of a glass transition was always demonstrated. With strong dehydration of pollen to 0.1 g of water per g of dry matter, the glass transition temperature increased to -5 deg. C, which significantly increased the safe storage temperature of pollen.
