Planar potato crisps were prepared from potato tubers of varieties Nicola and Panda, and tested by three-point bending. The effect of slice blanching (in water and water solution of Na) prior to frying them was also taken into account. Special attentionwas given to analysis of sounds accompanying the test. It was found that sound effects connected with breaking of crisps are tightly related to crisp rupture. This sound is very short (less than 1/100 of sdeconds) dumped pulse, that can be approximated by two dumped harmonics.
