Original language description

Adulteration of single-species fruit distillates has been an actual problem in recent years. The aim of our work is to find, using single-species fruit distillates made from known fruit varieties grown in various localities in the territory of the CzechRepublic, conclusive and unequivocal markers of genuineness and authenticity. To concentrate trace flavor substances that could characterize individual fruit distillates more complexly, micro-extration on solid phase (SPME-Solid Phase Micro Extration) was used. Gas chromatograph with mass spectrometer was used for identification of particular components extracted.

Stanovení markerů pro rozlišení ovocných destilátů

Czech description

V posledních letech je velmi aktuálním problémem falšování jednodruhových ovocných destilátů. Cílem naší práce je nalézt, s využitím jednodruhových ovocných destilátů vyrobených ze známých odrůd ovoce pěstovaných v různých lokalitách na území ČR, průkazné a jednoznačné markery pravosti a autentičnosti. Pro zakoncentrování stopových aromatických látek, které by mohly komplexněji charakterizovat jednotlivé druhově odlišné ovocné destiláty jsme využily mikroextrakce na pevnou fázi (SPME-Solid Phase Micro Extration). K identifikaci jednotlivých vyextrahovaných komponent jsme použili plynové chromatografie s hmotnostní detekcí.
