Stress responses in brewing yeast
Original language description
This brief review outlines the responses of yeast to different stresses that the cells have been exposed to in terms of genetical features, biochemical tenets, signal pathways switched on and off during the response, and the resulting changes in cell physiology and/or structure. Different kinds of stress, both environmental and those dictated by current brewing technology, are briefly enumerated. Special attention is paid to brewing yeast, its differences from the much more explored laboratory yeast strains and the effects these differences have on the specific ways in which brewing yeast cells mount and execute the various stress responses.
