Poster Pitch Talk at symposium of 14th International Trends in Brewing, 17-20 October 2021, Leuven, Belgium. A complex study of dry-hopped beer ageing in eight, very different beer types produced by brewery in 450hl brewhouse was performed. The aim of the study was to (i) quantify how fast was the decrease of hop oil content under their respective sensory thresholds, (ii) find out whether there was a trend in hop oil decrease during beer aging,(iii) characterize the stability of individual hop oils and (iv) identify, which factors influence their stability.
