Nowadays, barley is used as animal feed and the best quality barley is used mainly for production of malt in the alcoholic beverage industry. One of the oldest and most consumed alcoholic beverages is beer made from malted barley (typical for Czech pale lager), water, hops and yeast. The quality of barley grains is often associated with mycotoxin contamination of the cereal during both pre-harvest and post- harvest. The occurrence of mycotoxins varies depending on the type of beer and their origin, as well as on the raw materials and the adjuncts used for brewing. Mycotoxins can be transferred from infected raw materials to malt and subsequently to beer. The main aim of our research was to develop, optimize and validate a method based on ultra-performance liquid chromatography with tandem mass spectrometry using immunoaffinity columns for determination of multiple mycotoxins in beer. The proposed method was applied to commercially available pale lager beers from the Czech Republic and from abroad, and the method can be a useful tool for food control and as an indicator that mycotoxins have not exceeded legislative limits and contaminated barley and malt were not used for beer production thus are safe for the consumer.
