Nitroso compounds (NOC) consist of widely diverse molecules, and the same statement is valid for other resources where these contaminants may occur (beer, malt, meat products, cosmetics, or medicaments). Generally, NOCs are divided into volatiles and non-volatiles. Volatiles are strictly controlled due to the carcinogenic or mutagenic activity. However, there is still a need to have more studies about non-volatiles, for instance, more structural knowledge about their representatives, a specific method for their determination, and their health-effects. Hence, the previous research was focused on a structural characterization of N-related products formed in beer by reactions of artificially added nitrite. Such treatment was necessary to increase the target product concentration (naturally occurring in levels of ppb) and enable an identification by GC-MS/MS (by a chromatogram comparison of beer treated by isotopically labeled nitrite 15N). Apart from N-nitroso compounds, several newly identified (C-nitroso-/C-nitro- and even cyano-) compounds were found in adjusted beer. A presented observation study concerns with natural occurrence of found N-related products in 191 beers and 198 malts obtained in the commercial market. Most N-related products were detected using a specific GC-MS/MS determination method. Acquired relative responses evaluated by multivariate statistical analyses highlighted important representatives and also their correlations. The results of the presented study may be considered an indicator for future studies regarding these contaminants, namely a confirmation and quantification of found analytes, as well as their health impact.
