The apple supply chain faces significant challenges due to the opaqueness of many important quality attributes according to information asymmetry among the chain’s actors. The aim of the chapter is to investigate the coordination mechanisms required to incentivize investment in the quality of fresh apples. Using data from industry stakeholder interviews and consumer studies, we explore experience and credence attributes that consumers consider when purchasing fresh apples. We argue that relevant information on these attributes is difficult for consumers to ascertain, necessitating coordination mechanisms in the supply chain to support information sharing. We discuss governance mechanisms to mitigate information asymmetry and incentivize quality investment, focusing on club varieties and geographical indications (GIs). Club varieties can create a premium for high-quality apples by reducing imitation and counterfeiting, while GIs reduce transaction costs and promote coordination through common quality standards. Effective coordination requires alignment between branding strategies and the chain’s governance structure, considering the institutional context. Additionally, we present two case studies: Pink Lady, an Australian club variety that successfully created a premium market for high-quality apples, and Jablka Grojeckie, a GI in Poland struggling with coordination and information asymmetry. Insights from these case studies inform recommendations for producers, regulators, and policymakers to improve apple quality in agri-food supply chains.
