Original language description
The objective of the present study was to investigate the effect of cooking and different copper levels on fatty acid profile of leg meat of broilers. The broilers were fed a diet supplemented with rapeseed oil, copper sulphate pentahydrate at 175 mg Cu/kg (group 2), 35 mg Cu/kg (group 3), 175 mg Cu on 1-14 days and 35 mg Cu on 15-42 days (group 4). Lipids of raw and cooked meat were extracted, transmethylated and methyl esters analyzed using Hewlett-Packard 5890 gas chromatograph. Cooking reduced concentrtion of tissue PUFA and increased concentration of SFA and MUFA fatty acids.
