    Physiochemical and organoleptic changes in three apple cultivars (Golden Delicious, Idared and Gloster) were monitored during 14 weeks of storage at 6 °C and at a relative humidity 70 %. The sensory quality of apples was assessed by category point scaleand sensory profile was evaluated by graphical unstructured scale. Physiochemical changes were monitored by weight changes, refractive index, titratable acidity, dry matter, vitamin C and sugar content. All examined parameters changed during the observedperiod, mainly texture, taste, sugar and vitamin C content. There were also differences between tested cultivars. Correlation coefficients between organoleptic and chemical data were not significant, except between sweet taste and refractive index values.
