The composition of trace minerals and antioxidants of the honey varies, depending on the origin of the type of honey. The chapter focuses on the content of trace honey minerals of authentic Czech nectar and honeydew honey samples to find the relationshipbetween their content and the origin or type of honey. Honey serves as a good source of natural antioxidants and antioxidant activity, which are effective in reducing the risk occurrence of heart disease, cancer, cataracts, different inflammatory processes and immune-system decline. The right type of honey contains enough antioxidants to rival common fruits and vegetables without introducing weight gain. Honey samples were evaluated for their total polyphenol content, total flavonoids and 3´,4´-dihydroxyflavones and flavonols spectrophotometrically and major antioxidants were identified by HPLC-DAD/GC-MS.
