Original language description
Microscopic image analysis is a powerful tool for obtaining metric microstructural descriptors (e.g. porosity and average pore size measures) from planar sections via stereological relations. However, topological descriptors, such as the 3D Euler-Poincaré characteristic and 3D connectivity, cannot be obtained in this way. Taking bread as a paradigmatic example we show that complex microstructural information can be obtained when slices are available.
