Original language description
Condensed polyphosphates are widely used as additives in meat products. A spectrofotometric is the standard technique for the determination of phosphates. Unfortunatelly this technique isn't able to determine the length of chain of polyphosphates. For this reason capillary isotachophoresis and cITP-CZE was used for determination of polyphosphates. These techniques are able to separate polyphosphates with different length of chain and LOD is lower than spectrophotometric method.
