Original language description
The method based on inhibition of formation blue-green ATBS+ cation by antioxidants we have applied to study polyphenol materials of hops and hop products in relation to their antioxidant activity. The highest content of total polyphenols and total antioxidant activity were found in fine aroma hops and hop pellets the lowest ones in domestic and foreign typical high alpha varieties. Upon dependence on original hops variety the flavonoids (+)-catechin, rutin and (+)-epicatechin were found as major components and chlorogenic acid, o-coumaric acid, protocatechuic acid, naringenin and ferrulic acid were determined as minor constituents. The oxidation conditions commonly lowered measured values however in different range.
