Most of the fungi that are able to degrade caffeine and tannin belong to the Penicillium and Aspergillus genera. Biotechnological detoxification of coffee husk by a grass fungi have a great potential for animal feed application. Solid state fermentationwas carried out by Rhizopus sp. to improve the nutrition quality of coffee husk, due to the degradation of anti-nutricional and anti-physiological compounds. Optimization of bioprocess parameters were conducted using factorial design and surface res ponse. The best detoxification levels in erlenmeyer flasks (86% of caffeine and 58% of tannin decrease) were obtained with 75% moisture, at pH 6,5 and 28 °C after 7 days. The inoculum concentration did not affect the metabolization of toxic compounds by the fungal culture. The initial moisture content was the most important factor on the detoxification for both compounds.
