    In this study, 31 Lactobacillus strains with anticlostridial activity were tested for bacteriocin production. These strains had been isolated from Czech and Danish semi-hard cheese during ripening. Production of bacteriocins was studied using agar well diffusion assays, against 15 Clostridium. All isolates showed a certain level of inhibition, but for only 4 of them, the inhibitory effect could be dedicated to a bacteriocin-like substance.

    Inhibice Clostridium sp. látkou bílkovinné povahy, produkované laktobacily, izolovanými z polotvrdých sýrů.

    V této studii bylo testováno 31 kmenů laktobacilů s antiklostridiální aktivitou na produkci bakteriocinů. Všechny kmeny byly izolovány z českých a dánských polotvrdých sýrů během zrání. Produkce bakteriocinů byla studována well-agar diffusion metodou, proti 15 kmenům rodu Clostridium sp. Všechny izoláty prokázaly inhibiční aktivitu, ale pouze u 4 kmenů byl inhibiční účinek způsoben látkou bílkovinného charakteru (bakteriocinem).
