Original language description
Due to its high content of lactose and proteins, whey might represent a valuable raw material for further processing. On the other hand its high salt content still presents whey as a problematic waste from dairy factories. This paper brings data about fractionation of whey components, such as proteins and lactose using membrane separation processes. Samples of natural salty whey from various Czech dairies were treated by ultrafiltration on ceramic membranes (Membralox) and obtained permeates were purified by nanofiltration using polymeric flat membranes Desal DL (Osmonics), NF 245 (Dow) and TFC SR100 (Koch). Filtration kinetics and separation efficiency were studied in dependence on various parameters, e.g. pH, driving pressure, membrane used and prefiltration.
