Original language description
Involving of 5?20% of hemp wholemeal from dehulled and hulled seeds (DHW, HHW) into wheat composites brought a gradual decrease of bread volume. Sensorial profile of fortified product depended on hemp sample type ? better score reached bread with DWH. For bread altered by HHW, crumb porosity increased in pore densities (up to about 74%) and diminished in mean cell areas (up to about 31%); a reversal trend was observed for bread with DHW. Bread volume and crumb penetration were significantly correlated to both cell density (r -0.69 and -0.65, respectively) and to mean cell area (0.79 and 0.69, respectively) (P = 99.9 %).
