Original language description
Electrical Impedance Spectroscopy (EIS) is the relatively new method which can be applied for a food quality assessment. Classical methods of electrolytes impedance measurement require a set of metal electrodes which are in direct contact with measured medium. The complicated electrochemical processes on the interface electrodes-electrolyte could substantially influence the value of measured impedance. The aim of presented study is introduction of the electrode-less method of electrolyte impedance measurement and its comparison with the classical impedance methods. For experimental verification of the methods the impedance properties of orange juices were investigated. The calculation of the equivalent circuit component values is based on non-traditional algorithm inspired by the behavior of real ant colonies.
