Characterization of beta-glucan extracted from barley
Original language description
Water soluble beta-glucans (BG) were extracted from one waxy line and one czech barley cultivar with standard starch composition. Extracts composition was characterized by Fourier transform infrared (FT-IR) and analytical. The molar mass was determined by GPC and ranged from 4x103 to 1x106 g/mol. Viscosity was measured by RVA at various concentration (1-5%), temperatures (18-90 oC) and shear rate (50-500 s-1).
