Fruit storage, if conducted on an industrial scale, is a demanding process, in which precise control of storage conditions plays an important role. Most frequently, the storage of fruits requires controlled temperature, relative humidity and composition of the atmosphere. Proper setting of the parameters significantly extends the shelf life of certain fruits as well as bridging the seasonal production gap.
