Original language description
Massecuite are obtained by boling sugar solutions (syrups) under vacuum; the porcess consistss of the evaporation of water accompanied by simultaneous crystallization of sucrose from supersaturated solutions. As a result, a heterogenous mixture of sucrose crystals and mothe syrup, so-called massecuite, is obtained.
