Original language description
Flaxseed mucilage (FSM) is a mixture of arabinoxylan and smaller amounts of pectic polysaccharide, proteins and small molecules. It is able to hold water and thus protect the seed during germination. FSM is attractive for many foods and health applications because of its unique rheological properties, high water-holding capacity and ability to form viscoelastic systems. In this work, the mucilage samples were isolated from flaxseeds of ten cultivars. Chemical composition, structure and rheological properties of FSM were characterized by spectroscopic, separation and rheological methods.
