Currently there is a growing interest in the functional properties of food and also in the role of antioxidants which promote health and reduces the risk of chronic diseases. Most snacks are made from standard non-grain Triticum aestivum, which contains a minimum of minerals and antioxidants that are stored in the bran. The aim of this study was to determine the total amount of polyphenols and antioxidant activity in snacks (sticks) which was made from coloured wheat varieties. Antioxidant activity results were in the range from 21.06 to 34.5 mg TE.100 g-1. The highest value was in Skorpion wheat (34.5 mg TE.100 g-1). Between Skorpion wheat and control was observed significant difference (p < 0.05). The highest amount polyphenols was found in the sample of Konini (8.85 mg GAE.kg-1). Between Konini and control was observed significant difference (p < 0.05).
