The aim of our study was to evaluate changes in selected parameters, specifically daily milk yield (DMY), basic milk composition and renneting parameters, pH, titratable acidity (TA), coagulation time (CT) and curd quality (CQ) of sheep milk during lactation in the Lacaune ewes (n = 8), reared under intensive nutrition. The stage of lactation (SL) had a significant effect on the DMY and contents of all basic milk components. The DMY and fat content were relatively high during whole lactation. In our opinion these trends were influenced by the quite intensive nutrition. In contrast, the contents of true protein were relatively low. In our opinion relatively low contents of this parameter was mainly affected by the relatively high milk yield of ewes. The pH of milk was very stable during lactation. The TA was also relatively very stable in the first half of lactation, however in late lactation the values of this parameter significantly increased. The SL had no significant effect both on the CT and CQ. In our opinion, relatively balanced values of the CT and CQ indicate on the good health state and correct nutrition of ewes during the whole lactation.
