Fractal dimension is one of important parameters of fractal geometry, which can be adapted for variety of applications. In this work, we explored the use of fractal methods for analysis extrudate cut view (section) images. The idea was to extract some fractal indicies to describe the textural properties such as: crispness and hardness. The extrudates were produced in a double screw extruder. The different inner structures were obtained by changes of process parameters. From each batch, 20 samples were chosen by random sampling, which were later divided into two parts. One part of the extrudate sample was measured in texture analyzer and second one was prepared for cut view imaging. The images of the cut-view were taken in the light chamber with standard D65 light. The Fourier power spectrum methods were proposed for the assessments of textural properties of extrudate samples. To measure the image fractal dimension the Matlab software was used.
