aim of this work was to evaluate broad assortment of table beet (7 genotypes), carrot (28 genotypes), onion (15 genotypes) and parsley (5 genotypes) on the content of nutritionally important compounds -- dry matter, reducing sugars and carotenoids. The mean dry matter content was 16 % in beet. Carrot, onion resulted by 13 %, and parsley by 24 % of dry matter. Content of reducing sugars was 111 g/kg in table beet, 104 g/kg in carrot, 90 g/kg in onion, and 93 g/kg in parsley. Mean carotenoids content in carrot was 86 mg/kg, in table beet 2 mg/kg. The importance of cultivar was significant in all cases. There were found also statistically important positive correlations (r = 0.43 -- 0.86) between dry matter and sugar content in all species.
