Among the various kinds of commonly consumed meat, goat meat possesses a high risk of human infection due to high susceptibility of goats to T. gondii. We have estimated the burden of T. gondii in various tissues of experimentally infected goats and determined the viability of T. gondii cysts in vacuum packed goat meat (VP) and after the manufacturing of dry fermented sausages (DFS).
