The object of this work was the comparison of four types of plant oils from the view of their composition. There were fatty acids analysed (the content of saturated and unsaturated fatty acids, the occurrence mono and polyunsaturated fatty acids and content and ratio n-3, n-6 and n-9 fatty acids). The soybean, sunflower, rapeseed and flaxseed (from fibre and oil species) oils were chosen from the plant oils for the analysis. The results show that the flaxseed oil (fibre species) is of the most quality.The rapeseed oil has the optimal ratio of n-3:n-6 FAs, 1:5 respectively. But it contains more MUFAs and less dietetic valuable PUFAs that the other oils. The sunflower oil was of the lowest quality.
