In the study was compared nutritional value of selected legumes: soybean, field peas, broad beans, and lupin. In these legumes we determined content and quality of the oil. We focused especially on the content of fatty acids. Fatty acids were divided into groups according to the saturation. We monitored the total content of saturated fatty acids (SFA), unsaturated fatty acids (UFA), monounsaturated fatty acids (MUFA), and polyunsaturated fatty acids (PUFA). We also divided them to group n-3, n-6, and n-9 fatty acids (FA). Legumes have a favorable ratio of n-3 FA:n-6 FA, especially lupin oil (1:4.3), which is in accordance with ratio 1:5 recommended for human diet.
