Original language description
Spray dried products, such as milk powders exist in an amorphous nonequilibrium state. Amorphous materials have a glass transition temperature (Tg) below which they are in a 'glassy' state. Above this temperature they exist as liquid-like 'rubbers'. Above Tg various properties of the materials are changed. Stickiness is one of example this changes. Procedures based on thermal analysis, differential scanning calorimetry (DSC) and differential thermal analysis (DTA) were examined to determine the Tg for skimmed milk powder. Thermal analysis methods consist of heating measurement. DSC detects the typical change of specific heat at Tg. DTA is based on difference between studied sample and reference.
