The aim is evaluation of the modified atmosphere packaging (MAP) effect obverse air atmosphere packaging on colour indicators of organic chicken meat. 24 fresh samples (half carcasses) were packaged in MAP1 (80% O2/20% CO2), 24 samples in MAP2 (70% N2/30% CO2) and 24 samples were aerobically packaged (AIR). Detection of gases mixture in MAP and colour indicators (lightness, L*; redness, a*; yellowness, b*) of raw external surface (skin and muscle) of breast and thigh were measured. The experiment was conducted on 2nd day of storage and repeated on 7th, 10th and 14th days of storage. Results of present study indicated that applications of MAP had positive effect on the colour parameters of organic chicken meat, which could be influence on consumer buying decisions.
