Original language description
The aim of study was to investigate qualitative and quantitative properties of family chickens meat from one of household in rural of Czech Republic. Production properties (yield and weight), sensorial attributes, colour indicators, texture of muscle (raw and baked) and chemical indicators (dry matter, total protein, net protein, collagen, fat and ash) in fresh chicken meat were evaluated. Low quantity properties (yield of eviscerated carcass and muscle mass) and quantity properties (protein and fat content) could be due to use of diet without anticoccidial drug. More yellow (b*) colour of skin may be resulted from feeding of chickens with ground corn. Evaluation of sensorial attributes for meat of family chicken was high, reflecting the consumer trend to more ?natural? chicken.
