The aim of study was to evaluate the influence of surgical and immunological castration on antioxidant capacity in different muscles/cuts of pigs. Nine muscles/cuts (M. serratus, M. longissimus dorsi, internal oblique, M. adductor, jowl muscle, back fat, M. triceps brachchii, M. biceps femoris, M. semitendinosus) from four groups of pigs (surgically castrated, non-castrated, immunocastrated and sow) were analysed. Generally, 2,2-diphenyl-1-picrylhydrazyl (DPPH) % inhibition method was used to compare antioxidant capacity. The highest DPPH % inhibition values of pork samples were found in surgically castrated pigs whereas the lowest values were found out by non-castrated pigs. The study indicated that methods of castration have effect on antioxidant capacity of pork.
