Comparison of selected fixative solutions in fixation of processed cheeses
Original language description
There are a lot of types of fixative solutions that prevent from decomposition processes. The fixative solutions have to be able to penetrate into the tissues and preserve structure of samples with minimal negative effect on sample texture. It is important to select a suitable fixation solution which enable appropriate sample processing and also enable color reaction with the target antigen. The aim of the work was to compare the suitability of basic fixative fluids for fixation of processed cheeses and their influence on their texture. We tested several types of fixative solutions on fixation of processed cheese samples, tested solutions included 10% formalin, ethanol, Carnoy?s solution, and Alcohol-Formalin-Acetic Acid (AFA). After fixation the texture of the samples were measured. The results showed that AFA was the most suitable fixative solution for the fixation of processed cheese.
