Evaluation the colour parameters of giblets from organic and wild ducks

The aim of this study is evaluation and comparison colour of giblets form organic and wild ducks. Giblets (liver, heart and gizzard) of organic (24) and wild (25) ducks were used in the study. Three colour indicators were investigated including lightness, L*; redness, a* and yellowness, b*. liver and heart of organic duck were significantly (P < 0.05) lighter (higher L* value) than such organs from wild duck. Giblets of wild ducks was more red than (higher a* value) than giblets of organic duck. The gizzard and heart of wild ducks were more yellow (higher b* values) than the organic ducks. The results show differences in colour parameters between the giblets of organic and wild duck which could be attributed to varies reasons including the bleeding efficiency and pre-slaughter/hunting conditions that reflected on the colour of giblets.
