    Antioxidant properties of chitosan based edible films with addition of sweet potato extract

  • Original language description

    The main aim of this study was to prepare chitosan edible films enriched with natural water extracts from sweet potato in different concentrations. Prepared edible films were tested by following analyses: total polyphenols content (TPC) and for determination of antioxidant activity the ferric reducing antioxidant power (FRAP). There was found that the amount of polyphenols was highest in the sample 40CHLSP (0.228 mg gallic acid/g) and the highest antioxidant activity was determined in sample 30CHLSP (1.047 umol Trolox/g). The results shown possible application as an active packaging due to the presence of phenols and antioxidant compounds, which can improve the shelf life of packaged foodstuffs.
