Ready-to-eat foods as a possible source of H. pylori infection for human
Original language description
H. pylori is currently found in more than half of the human population and it causes serious diseases of the gastrointestinal tract such as gastritis, gastric ulcers, mucosa-associated lymphoid tissue lymphoma, or adenocarcinoma. Due to its zoonotic potential, H. pylori infection may be transmitted to humans through contaminated raw materials and food of animal origin, among other means. The aim of this study was to evaluate the microbial quality of ready-to-eat foods. Attention was paid primarily to the pathogenic bacterium H. pylori. The presence of H. pylori in ready-to-eat foods was demonstrated by the presence of the glmM gene using nested-PCR. H. pylori was detected in 25 (50%) samples of the total number 50 samples. The most positive samples (59%) were found in the group ready-to-eat foods containing pastries (n = 29).
