Original language description
The analysis of intact proteins, extracted from the barley grain, the malt and the aliquots collected during malting and presented in this paper, show the feasibility of using the linear mode of MALDI-TOF MS to obtain a profile of the proteins present atall stages of the malting process. The best and the most reproducible results were obtained after a desalting procedure using Nanosep 3K and applying DHAP as a matrix for the MS measurement of the intact proteins.
