Original language description
The time dependency of fouling layer thickness was measured in continuous direct ohmic heating of milk. The experiments showed that fouling layer growth intensity can not be decreased by the higher wall shear stress induced by the higher flowrate. However increasing wall shear stress enlarges the maximal time tnf in which the fouling layer growth is negligible. It is promising since the fouling delay and thus also cleaning period could be enlarged only due to eligible hydrodynamic conditions
