Original language description
Animals are mostly slaughtered for meat. Each slaughtered carcass has of edible forms (meat, liver) and of non edible forms (tendons, bones). These non edible forms are called by-products. The aim of this paper shows utilization of by-products from slaughterhouses. By-products of the meat industry are usually disposed though they contain important proteins (collagen, elastin). These by-products can be processed by enzyme hydrolysis to collagen hydrolysates which can be used in food-, pharmacy- and cosmetics industry and as biodegradable packaging as well. Utilization of these by-products can be one of the best ways to reduce by-products from meat industry and streamlining of the whole processing.
