Utilization of cattle tendons

Original language description

Bovine tendons are raw by-products from slaughter-houses containing large amount of protein-based material and waste fat. All of these materials are marked as hazardous waste. Extraction of protein (collagen) is rather complicated and depends on fat amount in tendons. In this contribution we show that a de-fating waste tendon is possible at lower temperatures by mixtures of solvents. The advantage of this process is possible recycling of solvents and undisturbed primary protein structure.
