Chosen technological properties of Saskatoon Berry fruit (Amelanchier alnifolia Nutt.)
Original language description
The Saskatoon berry (Amelanchier alnifolia Nutt.) belongs to less known cultivated pomaceous fruit. It is native to North America and in Europe it is rarely grown. In our work the fruit of four North American cultivars grown in the conditions of CentralEurope were analyzed as far as the soluble solid content, titrable acidity and pectins were concerned. Above all, the cultivar ´Thiessen´ seems to be promising. The content of pectins in this cultivar was e.g. 13.80 g.kg-1 FM. In the same cultivar, the highest total content of acids was 15.25 g.kg-1 FM (expressed as malic acid). On the contrary, the highest value of soluble solid contents was 18.30% in the cultivar ´Martin´.
