Study of physico-chemical characteristics of selected wines from the Bzenec Moravia region
Original language description
The main aim of this study was to characterize the wines selected from the South Moravia production area from the year 2006 to 2019. The physico-chemical properties of the wines were evaluated as total anthocyanin content, total polyphenol content, antioxidant, pH, density, total acidity, and residual sugar content. The highest anthocyanin content was found in Collection wine, 146 mg.L-1 , and the lowest was obtained for Chateau Barbora. The highest polyphenol content was observed in Chateau Barbora, 5086 mg.L-1 , whereas the lowest was found for riesling, 668 mg.L-1 . Antioxidant activity was calculated as %inhibition, and the highest value was found to be 91% for Collection wine, and the lowest was 84% for riesling. Maximum total acidity was found at 10.9 g.L-1 for Riesling, whereas the lowest was 6.9 g.L-1 for Polacek. The highest residual sugar content was 6.5 g.L-1 for Florian, whereas the lowest was 3 g.L-1 for Polacek and Riesling.
