The goal of the project is to identify and to select selenium-biotransforming strains of lactic acid bacteria (LAB), bifidobacteria and yeasts for development of selenium-enriched fermented products and other bioprocesses. The sub-goals are as follows: - Testing of selenium biotransformation capacity in strains of LAB, bifidobacteria and yeasts; their properties after selenium-enrichment: acid stress tolerance, antioxidant properties, their cytotoxicity and adhesion to the tissue cultures in vitro. - Selection of perspective strains for further applications. - Designing of dairy- or non-dairy- based fermented products using selenium-enriched bacterial strains and starter cultures and yeasts; their preparation on laboratory-scale.

Project results evaluation
The solution of the project proceeded according to the plan specified in the project proposal. A total of 23 outputs were created during the solution period, namely, 5 publication outputs (and another 2 in the editorial office), 2 utility models, a certified methodology, as well as a workshop was organized. Furthermore, an invention application (patent) was submitted and the results were presented at 11 international conferences. All planned goals and outputs were met according to the time schedule.
