RACIO - Rationalisation of food preparation field conditions
Project goals
The basic objective of research is the proposal for a new system of food preparation under field conditions including the proposal for menu for 250 to 300 persons for 30 days without a repeat of the main hot meal (combination of 30 meals for lunch and 30meals for dinner, in such a way that it is possible to change a combination of a lunch with a dinner after 14 days), the draft list of ingredients, the proposal for technology procedures of the food preparation and technical proposal for a new containermeans for the food preparation, transport and storage of ingredients. All in the context of the current way of management and ensuring the multinational operations in all climate zones except arctic zone.

Základním cílem výzkumu je navržení nového systému přípravy stravy v polních podmínkách včetně návrhu jídelního lístku pro 250 až 300 osob pro 30 dnů bez opakování hlavních teplých jídel (kombinace 30 jídel na oběd a 30 jídel na večeři, s tím že je možnéprovést záměnu/kombinaci obědu s večeří po 14 dnech), návrh seznamu surovin, technologických postupů přípravy stravy a technický návrh nového prostředku kontejnerového typu pro přípravu stravy a požadavků na přepravu, přípravu a skladování surovin. Všev kontextu současného způsobu vedení a zabezpečení mnohonárodních operací ve všech klimatických pásmech kromě arktického.

Project results evaluation
Planned tasks in terms of the goals stated in the project specification were achieved. Project results of the defence research RACIO – Rationalization of food preparation under field conditions is „The new methodology for the food preparation under field conditions.“ The methodology was certified and deposited in the Department of Logistics Agency of the Ministry of Defence. The methodology contains new procedures for food preparation of meals listed in the menu under field conditions. It is based on the list of available foods and food ingredients and reflects the instrumentation and technical equipment of the container kitchen.
