    Garlic is a member of the genus Allium(Liliaceae). Since ancient times, garlic is a recognized as an important medicinal plant. The consumption of garlic reduces the risk of cardiovascular diseases an cancer and improves blood sugar metabolism.The compounds responsible for the characteristic flavour and physiological activities of garlic are primarly organosulfur compounds, many of which have been identified. Among them sulfur-containing aminoacids present in intact garlic bulbs.This study is devoted toinfluence of garlic varieties on concentration of sulfur containing amino acids, S-alk(en)yl-L-cystein sulfoxides(pariculary alliin, methiin, and isoalliin)in garlic bulbs.

    Česnek je člen rodu Allium(Liliaceae).Již v dávné minulosti byl poznán jako důležitá lékařská rostlina.Požívání česneku snižuje riziko kardiovaskulárních nemocí a rakoviny a zlepšuje metabolismus krevního cukru.Sloučeniny, které jsou odpovědné za typickou vůni a physiologické aktivity česneku, obsahují organicky vázanou síru a mnoho z nich již bylo identifikováno.Kromě nich se v paličkách česneku vyskytují aminokyseliny s obsahem síry. Tato studie je zaměřena na vliv odrůdy česneku na koncentraci aminokyselin s obsahem síry, S-alk(en)yl-L-cystein sulfoxidy(částečně alliin, methiin, and isoalliin)v palicích česneku.
