Wheat is one of the world’s most commonly consumed cereal grains. Wheat grains is mainly composed of carbohydrates meaning that wheat is indisputably one of the important sources of energy due to the high starch content. Starch is a main component of human diet and greatly affects functional properties of food. The health effects of starch mainly depend on its digestibility, which determines its effect on blood sugar levels and numerous studies confirmed important association between the glycaemic index (GI) and digestible polysaccharides. The nutrient composition of grains is affected by many factors, including cultivar (genetic factors), growing location (agronomic conditions) and the season or environmental factors.
