    Obtaining gelatin microcapsules with essential oil by electrostatic spraying method

    The chemical instability of essential oils should be noted, the substances contained in them are volatile, and are also subject to destruction due to oxidative processes upon contact with oxygen. One way to preserve their properties is to encapsulate essential oils in polymer carriers. The electrospray method makes it possible to obtain micro- and nanocapsules in a wide range of sizes, and can also be used for a wide range of encapsulated substances. The use of gelatin as a substance from which the wall of the microcapsule will consist allows expanding the scope of such microcapsules, due to an increase not only in shelf life, but also in the possibility of internal use of essential oils that do not have high organoleptic properties. The purpose of this study was to develop a method for obtaining gelatin microcapsules with encapsulated essential oil by electrospray. It was found that when drops of gelatin-oil emulsion fall freely into a container with cooled low-viscosity silicone oil, large beads are formed, the Feret diameter of which reaches 2256 +- 107 μm. The formation of a spray cone occurs when voltage is applied to the device contracts starting from 6000 V. The applied voltage facilitates the separation of emulsion droplets from the tip of the needle and makes it possible to reduce their size to 354 +- 34 μm. Further increase in voltage at the contacts of the device is not necessary and can damage the secondary structure collagen, which will affect its rheological properties. The loading of amaranth essential oil into gelatin capsules obtained without using high voltage was 54.12+-2.57%, when using high voltage we observe a slight decrease in the loading of essential oil to 49.24+-2.33%. At the same time, there is no change in the efficiency index of essential oil encapsulation in gelatin-based microcarriers, the index of which is 58.12+-2.89%.
