The aim of this work was to evaluate systematically the specifi city of serum IgE to cow milk proteins during tryptic and chymotryptic hydrolysis in a group of individuals allergic to cow's milk. The results of these experiments will serve as basis for development of a technological process of production of safe milk proteins partial hydrolysates for human nutrition intended for adult population.
